Vegetable Quiche

Grease a small quiche dish and preheat oven to 200 degC

Ingredients

Short crust pastry -
1 1/2 cups plain flour, 1/4 tsp salt, 100 g butter, cold water

Sift flour and salt, cut in the butter until it resembles breadcrumbs, mix to a stiff dough with a little water. Roll out lightly.

Line quiche dish with pastry and bake blind 12 min, then remove lining and crisp bottom for one more min.

Filling -
1 Tbl butter
small onion finely chopped
2 Tbl plain flour
1 cup milk
cup of veg (spinach, grated zucchini, chopped tomato etc)
2 eggs
1/2 cup grated cheese
salt and pepper

melt butter in a saucepan, cook onion until clear, add flour and stir in until frothy. Gradually add milk, stirring constantly until boils and thickens and stir in veg. Remove from heat and add lightly beaten eggs and cheese. Season and pour filling into base. Bake in oven 30 min.
